TADM 220 BC Craft & Culture: Wine, Spirits, Cannabis and Beer explores the rich tapestry of British Columbia’s craft industries through a lens of culture, sustainability and responsible service. This course combines theory and hands-on learning to provide students with a deep understanding of wine, beer, spirits, and cannabis production, regulation and appreciation. Through guided tastings, mixology labs, and controlled practical exercises, students develop technical skills in beverage preparation while enhancing guest experience and hospitality practices. Students also gain Serving It Right certification, preparing them to deliver professional, responsible service in diverse tourism and hospitality settings.

Upon successful completion of this course, the learner will be able to:
- Describe the production processes of wine, beer, spirits, cannabis, and coffee, including key factors that influence quality and flavour profiles, with attention to the cultural contexts and sustainability considerations that guide responsible production
- Explain government regulations, industry standards, and responsible service principles, including Serving It Right certification, as they apply to beverage and cannabis operations in BC
- Demonstrate safe and professional use of bar tools, glassware and equipment, as well as tableside service techniques, to enhance guest experience
- Conduct guided tastings using industry-standard sensory evaluation methods to describe beverage quality including integrating perspectives on environmental significance and sustainable sourcing
- Design food and beverage pairing recommendations that enrich the guest experience while highlighting sustainable industry trends
- Analyze relevant quality assurance systems to support beverage and cannabis product integrity and consumer confidence
